Cook Crabs like a Restaurant Chef

We LOVE crabs and we are fortunate to live along the Pacific Ocean to enjoy fresh Dungeness crab when they are in season, usually from Thanksgiving to April. Many restaurants use crabs as their ‘headliner’ dish to draw people in, usually for a hefty price tag.
Why pay sky-high prices when you can cook crabs at home like a restaurant chef too! It may appear intimidating, but believe or not, it’s actually really simple. Follow these instructions and recipes to impress your friends and family at your next dinner party!
Well, to cook like a restaurant chef, we need to have the freshest ingredient. So, we visited our favorite fisherman/woman, Bill and Penny who are captains of “The Cricket”, located in Half Moon Bay, CA.
How to Make Tomato Chili Crab? (picture above)
Step 1: Boil Crab and Get Ingredients
Boil crab in a large pot of boiling water that’s seasoned with salt. It takes about 15 minutes to cook a crab. Main ingredients include garlic, shallots, ginger,ketchup, chili sauce. Click here for recipe and full list of ingredients.

Step 2: Clean Crab and Break into Pieces
Once the crab is cool enough to handle, use a little muscle power to pry the top shell (carapace) away from the body at the rear of the crab. This is the easiest spot to start to take the crab apart. You’ll see some internal organs and some non-white substance. You should toss anything that’s doesn’t look like white crab meat. Use a sharp knife to divide the crabs into pieces. Then use the back of the knife to whack on the shells so that they are cracked a little which makes it easier to break when served.

Step 3: Grind Ingredients
Add garlic, shallots, ginger and red chili (optional) in a food processor. Grind till it forms a paste.

Step 4: Stir Fry Crab in Chili Paste and Sauce
Fry chili paste in a low-heated skillet till fragrant. Add crabs and sauce which is made up of soy sauce, chili sauce, sugar, vinegar, ketchup, sesame oil and water. Click here for recipe and full list of ingredients
